Ingredients
1cup (91 g)old-fashioned oats
⅔cup (43 g)shredded coconutunsweetened
½cup (137 g)creamy peanut butter
½cup (40 g)flaxseed meal
⅓cup (92 g)vegan chocolate chips
⅓cup (77 ml)maple syrup
1tablespoon (17 g)chia seeds
1teaspoonvanilla extract
Instructions
Combine ingredients: In a large bowl, stir all the ingredients together until thoroughly combined.
Chill the batter: Cover the mixing bowl and chill in the refrigerator for about 1 hour, or until the mixture is completely chilled (this will allow the mixture to stick together more easily).
Make the balls: Roll the mixture into 1-inch balls and place onto a serving dish or storage container.
Notes
Reduce chill time: To speed up the chilling time, spread the mixture on a baking sheet and place in the freezer for 30 minutes or so until the mixture is completely chilled.
Add a little peanut butter to the batter if more stickiness is needed to hold the balls together.
Add spices: This recipe will taste great on its own, but if you want a slight variation you can add a teaspoon of cinnamon or pumpkin spice to the batter before forming the energy bites.
Storage: These can be refrigerated for up to a week, or placed in the freezer for up to 3 months.
