Chocolate Peanut Butter Bites

Made with just 8 ingredients, these Chocolate Peanut Butter Bites are a kid-friendly healthy snack that requires just one bowl and zero baking!

Ingredients

  • 1 cup (91 g) old-fashioned oats 
  • cup (43 g) shredded coconut unsweetened 
  • ½ cup (137 g) creamy peanut butter 
  • ½ cup (40 g) flaxseed meal
  • cup (92 g) vegan chocolate chips
  • cup (77 ml) maple syrup
  • 1 tablespoon (17 g) chia seeds
  • 1 teaspoon vanilla extract

Instructions

  • Combine ingredients: In a large bowl, stir all the ingredients together until thoroughly combined.
  • Chill the batter: Cover the mixing bowl and chill in the refrigerator for about 1 hour, or until the mixture is completely chilled (this will allow the mixture to stick together more easily).
  • Make the balls: Roll the mixture into 1-inch balls and place onto a serving dish or storage container.

Notes

  • Reduce chill time: To speed up the chilling time, spread the mixture on a baking sheet and place in the freezer for 30 minutes or so until the mixture is completely chilled.
  • Add a little peanut butter to the batter if more stickiness is needed to hold the balls together.
  • Add spices: This recipe will taste great on its own, but if you want a slight variation you can add a teaspoon of cinnamon or pumpkin spice to the batter before forming the energy bites.
  • Storage: These can be refrigerated for up to a week, or placed in the freezer for up to 3 months.
